Orange County will soon be home to Twenty Eight Restaurant & Lounge, which will present a fresh, modern approach to traditional Chinese cuisine. Set to open in August, the new Irvine restaurant will bring a unique dining experience unlike any other in the region with a menu of contemporary Chinese dishes that utilize local, seasonal ingredients and bold flavors.

The mastermind behind the menu of modern Chinese cuisine is Twenty Eight Executive Chef & Partner Shirley Chung, best known from Season 11 of Top Chef New Orleans. Her experience as a “top chef” extends far beyond her television debut. Prior to her rise to fame on Top Chef, she held the Executive Chef position at China Poblano by Jose Andres. Shortly after she opened China Poblano, it was nominated for the Best New Restaurant Award by the James Beard Foundation in 2011. While working at China Poblano, she fell in love with Mexican cuisine and learned more about her own heritage. Her experience working there helped perfect her skill for Chinese cuisine, which she presents with a modern twist at TWENTY EIGHT. Born and raised in Beijing, China, Chef Shirley is trained in classic French and Italian cuisine, and has worked and opened restaurants for Thomas Keller, Guy Savoy and Mario Batali.

TWENTY EIGHT’s menu, which will change seasonally and incorporate daily specials, will feature the following flavorful, modern Chinese dishes year-round, including Lobster Dumpling with Consommé, House-Cured Head Cheese & Beef Tongue, Singapore-Style Chili Lobster with Hand-Cut Noodles, Steamed Local Black Cod in Banana Leaf, Slow-Braised Ox Tail, Squid Ink Hand-Cut Noodles with Uni, 8 Treasure Rice, and Tofu Panna Cotta with Red Bean Ice Cream.
